Properly wash the chicken pieces under the running water and keep them aside.
Remove the peel of the onions, wash them, and wash the tomatoes, green chili, and curry leaves. Chop onions and tomatoes separately, slit the green chili and remove curry leaves from the sprig.
Heat the oil in a vessel, add whole spices( bay leaf/ biryani leaf, caraway seeds/ shahjeera, cloves/ lavanga, cardamom/elaichi, cinnamon stick/ dalchina chekka, stone flower/ biryani flower) and saute for 30 seconds.
Add chopped onions, slit green chili, curry leaves to the vessel and fry the onions until golden yellow.
Add turmeric powder to the vessel and saute for 30 seconds.
Add ginger-garlic paste to the vessel and saute until the raw smell disappears.
Add cleaned chicken pieces with half a teaspoon of salt, and stir it. Close the lid and cook for 5 minutes.
Add chopped tomatoes to the vessel and cook until tomatoes become mushy.
Add red chili powder to the vessel and saute for a minute.
Add chicken masala or ground garam masala to the vessel and saute for a minute.
Add half a cup of water to the vessel and salt as needed. Close the lid and cook for 5 minutes.
Add freshly chopped coriander and mint leaves to the curry and turn off the stove.
Finally, Homestyle chicken curry/ Curried Chicken is ready to serve.
