Ingredients
  

  • 2 tbsp cooking oil
  • 1 bay/ biryani leaf
  • ¼ tsp caraway seeds/ shahjeera
  • 2 cloves/ lavanga
  • 2 cardamom seeds/ elaichi
  • 1 inch cinnamon stick/ dalchina chekka
  • ½ biryani flower/ stone flower
  • 4 onions medium-sized, chopped
  • 2 green chili slit
  • ½ tsp turmeric powder
  • 1 tsp ginger-garlic paste
  • 1 kg mutton/ goat meat/ chevon meat cleaned pieces
  • salt as needed
  • 4 tomatoes red, ripened, medium-sized, chopped
  • 2 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp meat masala/ ground garam masala
  • 2 cups water
  • finely chopped coriander leaves
  • finely chopped mint leaves

Instructions
 

  • Wash and clean the mutton/ meat pieces and keep them aside.
  • Remove the peel of the onions, wash the onions, tomatoes, green chili, coriander and mint leaves. Chop onions and tomatoes, slit the green chili, and finely chop the coriander and mint leaves separately.
  • Heat the oil in a heavy-bottomed vessel or pressure cooker, and add the whole spices( bay leaf/biryani leaf, caraway seeds/ shahjeera, cloves/ lavanga, cardamom seeds/ elaichi, cinnamon stick/ dalchina chekka, biryani flower/ stone flower) and saute for 30 seconds. Keep the flame on a sim.
  • Add chopped onions, and green chili to the vessel. Fry the onions until golden brown. Keep the flame on a medium.
  • Add turmeric powder to the vessel and saute for a minute.
  • Add ginger-garlic paste to the vessel. Fry until the raw smell disappears.
  • Add cleaned mutton pieces to the vessel with half a teaspoon of salt. Stir it. Cover with the lid and cook for 10 minutes.
  • Add chopped tomatoes to the vessel and cook until the tomatoes become mushy.
  • Add red chili powder to the vessel and saute for a minute.
  • Add coriander powder to the vessel and saute for a minute.
  • Add mutton masala/ ground garam masala to the vessel and saute for a minute.
  • Add 2 cups of water to the vessel and adjust the salt. Cook for 15 minutes on a sim flame.
  • Add finely chopped coriander and mint leaves to the curry and turn off the stove.
  • Finally, the mutton curry recipe/ chevon meat recipe is ready to serve.
